1 whole salmon, fresh or frozen
1 large onion, thinly sliced
2 lemons, thinly sliced
fresh dill
1/4 cup white wine
Line large baking sheet with heavy foil. Place layer of sliced onions, sliced lemons and dill in layer. Wash salmon and place on top of slices. Cover with remaining onions, lemons and dill. Drizzle with white wine. Seal foil tightly and bake at 350 degrees for 1 hour 15 minutes.
Open foil carefully to release steam. Cut salmon down the middle line of the side and down the spine. Peel back the skin. Lift meat off the bones and place on serving platter. Gently pull the tail to remove the backbone. Place the remainder of the flesh on serving platter.
Serve warm, cold or room temperature with Curry Mayonnaise, Mustard Dill Sauce or Cucumber Sauce.
